Every day gluten-free makes more progress… in Boston I can now name several dedicated gluten-free bakeries, and when I travel – I recently took trips to San Francisco and Los Angeles – I always happen to stumble across something unexpected (or should I now say, expected).
Gluten-free baked goods and other traditionally gluten-heavy foods are becoming more available.
They’re not just available – you’re starting to see options. Now that’s real progress.
But gluten-free cinnamon buns are one thing that remains elusive. They exist, yes, but you won’t find them easily.
With their doughy and sticky texture, they are certainly hard to replace. Unfortunately, sometimes the things that are the toughest to find are the most delicious.
So, here are three different tried and tested recipes for gluten-free cinnamon buns…

Gluten-Free Cinnamon Buns Recipe #1 (Makes 10)
Ingredients:
2 cups buckwheat flour
3 tbsp butter
3/4 cup Greek yogurt (full-fat)
2 eggs
2 tbsp maple syrup
1/2 cup brown sugar
2 tbsp butter
1 tbsp cinnamon
4 tbsp powdered sugar
2 tbsp heavy cream
Instructions:
- Cut the butter into the buckwheat flour until it makes coarse crumbs. Stir in the eggs, syrup, and yogurt until a good ball forms (use hands if needed). Wrap in plastic and put in the refrigerator for 8 hours, or overnight.
- Preheat the oven to 350 degrees. Take dough out of the refrigerator and roll it into a rectangle ¼ inch thick. Make a filling by combining the brown sugar, butter, and the cinnamon.
- Spread the filling evenly over the dough.
- Roll the dough (along the long edge) into a log. Slice into ten buns.
- Put on a baking sheet lined with parchment and bake for 25 minutes.
- Make a glaze with powdered sugar and heavy cream and drizzle over the buns before serving.
Gluten-Free Cinnamon Buns Recipe #2 (Makes 8)
Ingredients:
1/2 cup sugar
1/4 cup butter
2 eggs
1 pkg. yeast
1 cup warm water
1 lb package of gluten-free pizza crust
1/4 cup melted butter
1/2 cup brown sugar
2 tsp cinnamon
Instructions:
- Heat the oven to 375 degrees.
- Activate the yeast with a bit of the warm water and allow it to stand for 10 minutes.
- In a separate bowl, cream the sugar and butter. Add the eggs and blend it completely.
- Add the yeast mixture and blend.
- Stir in the pizza mix and combine it well.
- Roll this out on wax paper to a length of 18 inches and brush dough with melted butter.
- Make a filling with the brown sugar and cinnamon and then sprinkle over the dough.
- Roll the dough along the long edge. Cut into 2 inch slices and put into a greased pan.
- Set aside to rise for 30 minutes and then bake it for 25 minutes or until brown.
Gluten-Free Cinnamon Buns Recipe #3 (Makes 12)
Ingredients:
1/4 cup shortening + 1 1/2 tsp
3 cups gluten-free flour
1 cup milk
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar, tightly packed
1 tbsp cinnamon
1 1/2 cups powdered sugar
3 tbsp milk
1/4 tsp vanilla
Instructions:
- Heat the oven to 375 degrees.
- Combine the shortening with gluten-free flour (a standing mixer is best) and combine them. Stir in the milk and blend it until it’s moist.
- Turn the dough on a prepared surface and knead it until it’s thick.
- Roll to 1/3 inch thickness and spread butter over entire surface. Blend white and brown sugars with the cinnamon and sprinkle it over the dough.
- Roll the dough along the long edge and cut into 1 inch slices.
- Put the slices on a greased cookie sheet and bake them for 15-20 minutes or until brown.
- Allow to cool before glazing with a glaze made of powdered sugar, milk, and vanilla.
Enjoy these with coffee, milk, or just straight out of the pan!
