Is the Gluten-Free Diet a Disability? The Government Says Yes

In January of 2013, the U.S. Department of Justice (DOJ) ruled in a case in Massachusetts that effectively identified celiac disease and gluten intolerance as legal disabilities. The story is fairly simple – students at Lesley University, in Cambridge, objected to the available meal plan. Those who had gluten-related health concerns were being offered a regular diet of gluten-containing foods, so they had to either go hungry or find another option. Because they had purchased a meal plan with their tuition, however, they insisted that the school find a better solution. In the legal case, the school agreed to recognize the gluten issues as disabilities and to accommodate this by providing gluten-free meals, dealing with […]

Look, Mom! No Gluten! – A Recipe for Gluten-Free Blueberry Cornbread Muffins

To begin, I figure I ought identify my greatest culinary influence to date – this being a common request in job interviews, interactions with parents, and the like. It’s an easy one. There is an infamous Rice Family story which recounts the time my food-obsessed mother dragged me, an ornery and very hungry fifteen-year-old, through the streets of Paris for two hours determined to find the perfect restaurant for our first dinner in the city. Mom, resolute and hardly starving, walked into cafe after cafe, speaking with waiters in faltering French, sitting down at tables, […]

The Modern Grain-Free Diet: Why Complex Carbs Are Important on a Gluten-Free Diet

Long ago, around ten thousand years ago to be exact, gluten made its way into the human diet. Rather than meat, animal fat, and wild plants and roots, humans began eating heavily grain-based diets. You can learn more about why the food supply changed in a previous post about the paleo diet prior to the agricultural era. During this time, grains were refined in vast quantities to be used as a food source for entire communities. Soaking, sprouting, grinding, and cooking grains became the “norm”, and as we’ve discussed before, this caused a noticeable effect in the size of the human body and brain. Starting in ancient Egypt, societies faced more widespread autoimmune and degenerative […]

Is a Gluten-Free Diet Healthy? The Role of Fortified Foods

In a previous article on why gluten-free living isn’t just a fad, I described a few historic events that lead me to truly believe that it’s not just a fad. While I certainly don’t mean to flip sides on that opinion, whether or not a gluten-free diet is healthy is a totally different story. While gluten was originally connected to several chronic diseases long ago, and it’s connected to many additional health issues today, that doesn’t necessarily mean maintaining any old gluten-free diet is healthy. The key reason behind this is food fortification. You know those breads and cereals in the grocery store that say “Fortified With Vitamins XYZ”? Have you ever wondered why gluten-free […]
